Have I mentioned how much I love pasta?!  I think it’s safe to say that I am not alone here.  I don’t think I’ll ever be ready to swear it off completely, but there are some delicious alternatives that are just as good with the right accoutrements.  That is definitely the case with this Lentil Bolognese served over spaghetti squash instead of its starchy counterpart.  As much as I dig all veggies, trying to convince the girl who worked at one of the best authentic Italian restaurants in LA in her younger years that lentils were as good as meat in a sauce was a hard sell.  My friend and food blogger extraordinaire – Susan Salzman, made me a believer with her amazing recipe on The Urban Baker.  Trust me, from the mouths of babes, my children flipped over this meal!

Lentil Bolognese simmering on the stove…you would swear someone’s Nonna had been doing the cooking!  Lentils are high in fiber, folate and thiamin and have a relatively high antioxidant content compared to other legumes.  A far healthier choice than meat when trying to eat as clean as possible, and the rest of the sauce is packed with veggie goodness to nourish your body.  I followed the recipe completely, but did add some green peas right at the end for a burst of freshness and a lively pop of color.

Who needs pasta when you have this hearty sauce to fill your bowl and belly?!  Spaghetti Squash works in place of any pasta dish you would make with marinara sauce.  Loaded with Vitamins C and B6, it is 92 % water and functions as an electrolyte helping to regulate fluid balance and the PH of your blood.  Substituting squash for pasta has a number of benefits, not to mention it will help alleviate that muffin top instead of causing it to rise.  No one’s perfect, so a nice grating of parmesan is what I chose as my indulgence when preparing this meal.  This sauce will serve a large group, or leave you plenty of leftovers.  It’s great on it’s own too!  For Susan’s perfectly cooked spaghetti squash, click here.  For her insanely good lentil bolognese, click here.  Make dinner as delicious as it is healthy and cook this up on a rainy day.  Everyone will thank you, including your waist line.  Bon Appetito!
